Peaches are member of the stone fruit family meaning that they have one large middle seed along with cherries,apricots,plums and nectarines. One medium peach contains 2% or more daily value of vitamins E and K, Niacin,Folate,Iron,Choline,Potassium,Magnesium,and Phosphorus.

Peaches

Yellow peaches are the quintessential peach. They are distinguished by their fuzzy thin skin with hues of red, pink and gold blushing throughout. The flesh is aromatic, juicy when ripe, and golden colored with red bleeds at the skin and surrounding the central rough surfaced rust colored pit. They are often identified as a traditional "true" peach, meaning the fruit exudes a classic peach flavor, balancing sugar and acid for a well-rounded flavor. 

White peaches are low in acid, allowing for their natural sweetness to be more pronounced. Their skin is fuzzy and creamy white in color with blushes of red and pink. When ripe and at room temperature the fruit releases sweet aromatics. Like yellow fleshed peaches and nectarines, the amount of red or pink tones in the skin will differ with each variety, but has no bearing on the ripeness. 

Donut peaches are distinguished by their shape, which is roughly rounded and squat with a dimpled center at the fruit's stem end. The fruit's skin has a velvety finish and is flushed with tones of ivory, rose and rouge. Within the fruit's core is its non-clinging, easy to remove pit. Its creamy, juicy-when-ripe flesh is low-acid with a candy-like sweetness and a melting quality. The sweetness is due to what is referred to as the honey gene, a dominant gene that is found in all Chinese peach varieties.
