Mushroom

Button mushroom name refers to their shape and stage of growth, not the size. However, they are generally smaller mushrooms. The cap of the button mushroom is always tightly closed around the stem. Firm, delicate texture. Mild flavour that intensifies when cooked.

Enoki mushroom are also known as Flammulina velutipes also known as Enok, Enokitake, Enokidake, Golden Needle, Golden, Snow Puff, Vel was originated in Japan, Beige to creamy white in colour, with long, thread-like, edible stems topped with a tiny button cap. Firm, crisp texture. Mild, fruity flavour. Can be eaten raw or cooked.

Flat mushrooms are a common white mushroom (agaricus bisporus) picked at their most mature stage when the veil or underside has opened fully to form a flat top. Flats are the largest of the three white agaricus stages at between 60mm and 130mm and have the darkest gills.The robust flavour of flat mushrooms is similar to field mushrooms. They have a dense, meaty texture.

Oyster mushroom has a broad, fan or oyster-shaped cap spanning 5–25 cm;  the margin is inrolled when young, and is smooth and often somewhat lobed or wavy. The flesh is white, firm, and varies in thickness due to stipe arrangement. The gills of the mushroom are white to cream, and descend on the stalk if present. If so, the stipe is off-center with a lateral attachment to wood. The spore print of the mushroom is white to lilac-gray, and best viewed on dark background. The mushroom's stipe is often absent. When present, it is short and thick.

Shiitake mushrooms, pronounced shee-TAH-kay, range in colors from amber to paper bag-brown. Each mushroom has a wide, umbrella shape with a characteristic curled rim. Their caps, growing up to eight inches in diameter, have a cream-colored interior described as supple-firm. When cooked, shiitakes release a garlic-pine aroma and have a rich, earthy, umami flavor. 
 

Similar to the button mushroom, yet with a firmer texture, the Swiss brown has a light brown cap, which is sometimes slightly mottled.It has a Slightly "nutty" flavour which is more intense than the white button.It Can be substituted in any recipe specifying white mushrooms when a more full-body taste is preferred. Great marinated, in salads and kebabs.
