Garlic is a plant in the onion family, grown for its cooking properties and health effects. It is high in a sulfur compound called Allicin, which is believed to bring most of the health benefits.

Softneck varieties are easy to grow and tolerate a wide variety of climate conditions and are especially good for warfmer climates. The bulbs can be rather large with multiple layers of cloves. They have superior shelf life, and under proper conditions can be stored for up to 9 months. And they have some wonderful and pungent flavors. 

Silverskin garlics are in a class by themselves, literally, and in several ways; they are the last garlics to mature each season and they store the longest. There is also a great range of tastes, pungency and onset of pungency, clove color, leaf color and size as well as time of maturity. No other garlics braid better than Silverskins

Hardneck varieties of garlic are the more dramatic with fewer but larger cloves. They have less of an outer bulb wrapper. As they grow, they produce a stalk that coils from the top called a “scape” or garlic flower. Scapes can be harvested and used for creative cooking before the garlic itself is actually harvested.
