DragonFruit

The "Pitaya" is more commonly referred to as the dragonfruit. It is extremely beautiful fruit that has dazzling flowers and an intense shape and color. The dragonfruit is usually dark red color, although some types of this fruit are pink or yellow. The skin of the dragonfruit is thin rind. The skin is usually covered in scales, and the center of the fruit is made up of  red or white, sweet tasting pulp.

Red dragon fruit is an exotic tropical treat for those that are lucky enough to taste them. Dragon fruit cultivation comes from cactus plants grown in humid and tropical conditions such as Vietnam where they are called "Thanh long-Green dragon".With bright pink on the outside and "scales" covering it, the dragon fruit really does resembles a dragon. It has a pale interior studded with tiny, edible seeds and a sweet-tart flavor.

Yellow pitaya are grown commercially in Columbia and Australia. They are distributed to Asian and European markets, with a peak season in spring. This grapefruit-sized fruit actually grows on a climbing cactus. Its spongy pulp is white or sometimes pinkish red, sweet and juicy with numerous tiny edible black seeds suspended in it's flesh.
